Mama Mae’s Salted Caramel Recipe

Mama Mae’s Salted Caramel – The Recipe/Process

Ingredients

150ml Water
250g Caster Sugar
250ml Double Cream
1 tsp Vanilla Extract
4 Pinches of Salt (or more, until you are happy with the taste)

Process

  1. Add the water and sugar to a saucepan and boil the mixture until it turns a rich amber colour. If you notice sugar crystals forming on the sides of the saucepan while waiting for it to caramelise, clean down the sides of your saucepan with a wet brush.
  2. Once your mixture has turned amber, remove it from the stove. Add the vanilla extract to your cream and steadily pour both into the sugar mixture. Stir continuously until it is well combined.
  3. Add your salt, stir well and leave it to cool in a glass or heat proof container. And that’s it, you have just made Mama Mae’s Salted Caramel.
